摘　　要： 餐饮服务技能是酒店管理专业的一项基本技能,由于餐饮技能训练要求学生必须做到程序化、规范化,学生往往在训练中容易产生抵触情绪,怕苦怕累。为了让枯燥、乏味的铺台布、摆餐具、端盘子变得有趣,我们借鉴教育学里的微格教学法,利用现代的录音、录像等设备帮助学生训练。该文以佛山电大酒店管理专业学生为样本,对其进行餐饮技能微格教学实践,并纪录实践前后的效果,同时将采集到的数据利用SPSS软件进行T检验。结果表明培训前后学生实操成绩有了明显的变化,经过微格教学实践,培训后的成绩比培训前高。实践与实证表明,微格教学在餐饮技能教学中是可行和有效的。 Catering service skills is one of the basic skills of the hotel management major. Because the catering skills require students to reach procedures and standardization, the students often produce backlash and fearing of hardships in training. In order to make the boring spreading table cloth , setting the table, plate-carrying become interesting, We use microteaching in education, helping the students training by modern recordings and video equipment. As a sample of the department of hotel management in Foshan Radio＆＆Television University in this paper, practicing the microteaching of catering skills, writing down the effect of before and after practice, meanwhile, we Will use the collected data to SPSS software for T test. The results show that the operating score of students has obvious change before training and after training, after practicing the microteaehing, the score after training is higher than the score before training. Practice and data to prove that it is feasible and good effect for using the microteaching in catering service skills practice.
