摘 要: 种类繁多的红曲黄色素,是红曲菌发酵法生产的天然色素。部分红曲黄色素是值得工业化生产及应用的天然食用色素品种之一。该文对天然红曲黄色素的种类和性质、生产检测方法及产品标准等方面进行系统地阐述和讨论,为读者进一步全面了解红曲黄色素提供参考,并为红曲黄色素国家标准的修改提出一己之见。 Monascus yellow pigments are natural pigments produced by Monascus fermentation. There are many kinds of Monascus yellow pigments,some of which are worthy of industrial production and application. In this paper,different kinds and properties of natural Monascus yellow pigments are introduced,as well as a discussion on the measurement method and product standards. It’s hoped that this paper will provide the readers a comprehensive understanding on Monascus yellow pigments. Furthermore,this paper could be used as reference for the modification of the national standard of natural Monascus yellow pigments in the future.
