摘 要: 本文采用分光光度法测定番茄中的维生素C含量,此方法原理为:利用维生素C的还原性,将Fe^(3+)转化为Fe^(2+),Fe^(2+)可以与K_3[Fe(CN)_6]反应生成可溶性普鲁士蓝。通过测定普鲁士蓝在750 nm处的吸光度间接测定番茄中维生素C的含量。结果表明三氯化铁用量为6mL,铁氰化钾用量为4mL,反应时间为50min,番茄中的维生素C含量为16.64 mg/100 g。 In this paper,the content of vitamin C in tomato was determined by spectrophotometry, the principle of this-method: the reduction of vitamin C can be trlvalent iron into divalent iron, divalent iron and potassium ferricyanide reaction to generate soluble prussian blue. determination of vitamin C content in tomatoes by measuring the absorbance of the blue at 750nm. the results showed that the content of vitamin C in tomato was 16.64 mg/100 g.
