摘 要: 脂肪酶是一种能够在非水相体系中催化酯交换的生物酶.在实际应用过程中,脂肪酶的稳定性非常重要,因为这会直接影响工业化的成本和效率.针对温度、时间、溶剂和酰基供体对脂肪酶催化酯交换反应稳定性的影响进行了系统的研究.结果表明,温度和溶剂极性对脂肪酶催化稳定性的影响比较显著,而时间和酰基供体的影响不明显. Lipase is a kind of enzyme that can catalyze interesterification in a non-aqueous system. Stability of lipase is important in practical applications because of its effection of the production cost and efficiency. To understand the influence of different factors on catalytic stability of lipase, the effects of temperature, time, solvents and acyl donor on stability of lipase interesterification are studied. The results show that the effects of temperature and solvent polarity on catalytic stability of lipase are significant. But the effects of time and acyl donor are not obvious.
