摘 要: 利用单因子实验和正交实验对一株具有抑真菌作用乳杆菌的发酵培养基进行优化,并测定其抑菌谱。结果表明,通过正交实验优化乳杆菌ALAC-4的最佳培养组分为蔗糖20 g/L,牛肉膏12 g/L,蛋白胨12 g/L,酵母膏6 g/L,硫酸镁0.6 g/L,硫酸锰0.3 g/L,氯化钾0.3 g/L,吐温-80 1 mL/L,其他培养基成分添加量不变。在此条件下,抑菌圈直径可达到23.05 mm,比优化前提高了31%。乳杆菌产生的抑菌活性物质抑菌谱较广,对大多数酵母菌和霉菌都有抑菌作用。 The components of fermentation medium were optimized by orthogonal experiment to improve the production of anti-fungal substance of Lactobacillus ALAC-4. And inhibitory spectrum of antifungal substance also studied.The result showed that the optimized fermentation medium were sucrose 20 g/L, beef extract 12 g/L, peptone 12 g/L, yeast extract 6 g/L, magnesium sulfate 0.6 g/L, manganese sulfate 0.3 g/L, potassium chloride 0.3 g/L, tween-80 1 mL/L. And the other medium components were invariable.Under this condition, the inhibitory zone diameter was 23.05 mm. it was improved 10% than that before optimization. Moreover, the inhibitory spectrum of antifungal compound produced by ALAC-4 was wide.
