摘 要: 日本料理凭借色自然、味鲜美、形多样、器精良的特点业已成为新兴流行美食的代表。近年来,扬州市区日本料理店在周边城市的辐射和影响下增长势头迅猛。通过日料店走访、日料店兼职、亲身品尝、消费者采访、网络调查等多种途径和方式,调查并分析扬州市区日本料理店的经营现状,提出今后应致力于加强宣传、提高菜品质量、推进料理本土化、提高服务质量、细分日料市场的发展策略。 Japanese cuisine has led a new trend of delicacy thanks to its genuine color,delicious flavor,diversity,and delicate tableware. Recently,Japanese cuisine has become more and more popular in Yangzhou. This paper researches and analyzes the present management situation of Japanese restaurants in Yangzhou by visiting and doing part-time jobs in some Japanese restaurants in Yangzhou city,tasting Japanese cuisine personally,interviewing customers and online surveying. Meanwhile,it presents the corresponding development strategies,including strengthening publicity,increasing the variety of dishes,promoting the localization of Japanese cuisine,improving the quality of service and segmenting Japanese cuisine markets.
