摘 要: 构建一种出口食品安全风险评估的模型,并对出口花生安全风险进行初步验证。对引起出口食品风险因子的风险可能性及其严重度进行综合评估,应用德尔菲法、风险矩阵法建立风险评估模型,并运用该模型对2013-2015年的出口花生安全进行风险评估。经本模型分析,因存在"黄曲霉毒素B1、总量"这一"极高风险因子",该时间段内山东口岸出口花生判定为高风险产品。该模型简单、有效,需要检验检疫数据和专家经验支持,适合部分出口食品的快速安全风险评估。 To construct a risk assessment model for exported food safety,and carry out the preliminary verification for security risk of exported peanuts,the risk probability and severity of exported food risk factors were synthetically evaluated. Delphi model and risk matrix were used to establish the risk assessment model. The model was used to assess the risk of exported peanuts from 2013 to 2015. The analysis results of the established model showed that the peanut exported from Shandong port during the period was identified as high-risk products on account of the existence of the "very high risk factor" of "aflatoxin B1,total". This model is simple and effective,and it needs support by inspection and quarantine data and expert experience,which is suitable for rapid safety risk assessment of some exported foods.
