摘 要: 目的了解周口市销售的熟肉制品中亚硝酸钠含量残留情况,防止亚硝酸盐对人体健康造成危害。方法按照《河南省食品安全风险监测实施方案》的要求,对周口市2014至2015年抽检的413份熟肉制品进行亚硝酸盐含量检测。结果抽检样品中亚硝酸盐含量超标144份,超标率为34.87%,最大值为1 370 mg/kg。农贸市场熟肉制品超标率(47.19%)高于其他制售单位,项城市熟肉制品超标率(58.70%)高于其他市区,差异均有统计学意义(均P<0.05)。结论周口市在售熟肉制品中加入亚硝酸盐的现象严重,特别是农贸市场和街头摊点上销售的散装熟肉制品中亚硝酸盐含量超标较高,有关部门应加强监督管理。 Objective To understand the cooked meat products sodium nitrite content in Zhoukou city sales residue,prevent nitrite harm to human body health. Methods According to the food safety risk monitoring plan of Henan province,in Zhoukou city from 2014 to 2015,413 samples of cooked meat products tested the nitrite content. Results Among the 413 samples,nitrite content exceeded standard,144,which was 34. 87%,the maximum 1 370 mg/kg. The farmer's market overweight( 47. 19%) than other producing units of cooked meat products,urban cooked meat products overweight( 58.70%) than other counties.Conclusion Selling cooked meat products which add nitrite is serious in Zhoukou city,especially on farmers' markets and street stalls selling cooked meat products in bulk by nitrite content exceeds standard is higher,relevant departments should strengthen the tube.
