摘 要: 以植物油为研究材料 ,研究了二氢杨梅树皮素 (DMY)的抗油脂氧化的能力 ;pH、溶剂、铁离子对其抗氧化性的影响。结果表明 :DMY具有良好的抗油脂氧化的能力 ,抗氧化效果优于儿茶素、大豆异黄酮、葛根异黄酮 ,与TBHQ的抗氧化效果相近 ;在 0~ 0 .1%的浓度范围内 ,其抗氧化效果随浓度增加而增强。DMY抗氧化作用的最适pH范围为 4~ 5 ;乙醇溶的DMY抗氧化作用优于水溶的DMY的抗氧化作用。铁离子对DMY抗氧化性有一定的抑制作用 ,但可以通过提高DMY浓度得到改善 ;因此 ,DMY作为天然抗氧化剂有很好的开发前景。 The effects of pH, solvents and various ferric iron contents on the antioxidative capacity of dihydromyricetin (DMY), a natural antioxidant extracted from Ampelopsis grossedentata, were investigated with plant oil as material. The antioxidative capacity of DMY is higher than that of catechin, soy isoflvone, and pueraria lobata isoflavone, similar to that of TBHQ, an artificial antioxidant. Within the concentration among 0 to 0.1 % (w/v), the antioxidant activity of DMY increased in a concentration dependent manner. The most suitable pH for DMY is pH 4 to pH 5.Ferric iron accelerated lipid oxidation but this effect can be inhibited with increment of DMY concentration. Thus, DMY could be used as natural additive for further exploration.
