摘 要: 通过测定不同NaCl浓度的谷氨酸钠液的旋光度,对CI-的影响进行了回归分析研究,得回归方程αi=0.01186-0.01385C(NaCl),相关系数R=-0.9994,表明有极显著的负相关。本试验还测定了不同质量的呈味核苷酸钠对谷氨酸钠旋光度的影响,表明有极显著的正干扰。 By determining the influence of different NaCl concentration on the optical activity of glutamate solution, the regression analysis of the Cl^- influence is studied. It concludes that the regression eqution is αi=0.01186-0.01385 C(NaCl) related coefficient R=-0.9994,which shows that Cl^- concentration has highly negative correlation with the optical activity of the solution. This research also determines the relation between different concentration of 5'-nucleotide and the optical activity of glutamate. It shows that the 5'-nucleotide is highly effected on glutamate.
