摘 要: 长期以来 ,纤维素作为一种丰富的可再生的生物能源广泛地应用于现代工业。研究表明 ,采用物理的方法对纤维素进行特殊的处理 ,或者采用化学的手段 ,将纤维素分子链中的结合键打开 ,引入新的官能团 ,就可以改变纤维素固有的特性 ,形成另具其它功能性质的衍生物 ,能够在食品生产中赋予产品优良的品质。本文综述了改性纤维素的种类和物化性质 ,以及这些衍生物的显著特点和在食品工业中的应用。 As a kind of abundant and reproducible biological resources, celluloses are widely used in modern industry for a long time. Recent investigation indicates that the inhere characteristics of cellulose can be changed by physical or chemical methods. Via the chemical one, the linked bonds can be opened and the molecule can be introduced some new functional groups. As a result, other derivatives with special functions are formed, which may confer food good qualities. This paper summarizes varieties and physicochemical properties of modified celluloses and discusses their applications in food industry.
