摘 要: 用TLC和HPLC法分析了莲藕中提取的酚类物质。莲藕中含有多巴、儿茶酚、没食子酸、D (+) 儿茶素和L ( ) 表儿茶素。对莲藕中多酚氧化酶(PPO)的特性进行研究,结果表明:莲藕中PPO的最适酚类底物为没食子酸。 Phenolics were isolated by TLC and HPLC from lotus roots and identified as dopa, catechol, gallic acid, D-(+)-catechin and L-(-)-epicatechin.Polyphenoloxidase(PPO) activity in lotus root was also estimated, and the results showed the optimum substrate of the PPO was gallic acid.
