摘 要: 研究了荔枝核提取液对亚硝胺(NDMA)合成的阻断作用及对亚硝酸根离子的清除作用。通过正交实验法得到了最佳提取条件为:以蒸馏水为溶剂,于100℃水浴,冷凝回流提取1h,此提取物对亚硝胺的阻断率可达84.53%,对亚硝酸根清除率可达84.71%。另外,还研究了Ca2+、Fe2+、Zn2+等人体微量元素对清除亚硝酸根的增强作用。 The two functions of litchi core extraction were studied in this paper:to interdict the synthesizing of NDMA and to eliminate nitrite.The cross experiment showed that the optimum condition for extracting was:using distilled water as solvent ,pick -up the condensation for 1hour at 100℃water bath.The interdiction rate for NDMA could reach84.53%and its elimination rate for nitrite could up to84.71%.In addition,the enhancement of eliminating nitrite by Ca 2+ 、Fe 2+ 、Zn 2+ ,etc.had also been studied.
