摘　　要： 用正交实验法得到从柚皮中提取抗亚硝化反应活性物的最佳提取条件是:以柚皮黄色外果皮为原料,在60°C下,用90%乙醇溶液回流提取1h。结果表明该活性提取物对亚硝胺合成最大阻断率为93.2%,对亚硝酸钠最大清除率为91.1%。 The extraction of citrus grandis peel was investigated with orthogoual test method. The results showed that the optimum conditions were extracting the peel with 90% alcohol solution in a water bath at 60 (°C) for one hour. The maximum capabilities of inhibiting the production of nitrosodimelhylamine and scavenging sodium nitrite were 93.2% and 91.1%, respectively.
