摘 要: 该研究通过试验,采用不同浓度的壳聚糖溶液涂膜处理萝卜。本文探讨了萝卜在贮藏过程中的主要生理生化变化,试验结果表明,在常温条件下,萝卜经过45d的贮藏,呼吸强度、失水率、可溶性糖含量、糠心率、腐烂率等均明显优于对照,为萝卜的保鲜提供了另一途径。 In this test, by using chitosan solution coating in different density to treat the radish, a grope for the main physiological and biochemical changes of radish in storage was investigated. The result shows that after 45 days storage under the normal atmospheric temperature by this method, the respiratory intensity, dewatering rate, solubility sugar content, spongy rate and decomposition rate of radish were obviously better than those of untreated radish.
