摘 要: 豆浆是东方传统保健饮料。由于东西方饮食习惯的差异,多数西方消费者因不能接受豆浆中的豆腥味而影响其推广。从东西方饮食差异和豆浆特点及豆浆的加工方法、品质判定等方面进行综述,最后对豆浆的发展前景进行了展望。 The soybean milk is Oriental traditional health drink.The promotion of soybean milk was affected because most western consumers did not accept beany flavor in it,due to differences in eating habits between east and west.In this paper,the differences between eastern and western diet,and the characteristics of the soybean milk and processing method,quality judgement of it and so on were summarized,finally the prospects for development of soybean milk was forecasted.
