摘 要: 介绍了猪油的主要组成及性质。对食品工业中液化猪油、猪油精制、粉末猪油脂等方面的研究进展作了详细论述。在猪油的工业应用中,着重介绍了猪油改性、醇解、水解(包括生物酶催化水解)、皂化等方面的进展情况。展望了猪油工业的发展趋势,并提出了一些建议。 The main components and property of t he lard were introduced.The researc h and development of liquefied lard,the refining of la rd and powdered lard in food industry were reviewed.In the industry of lard,the modification,alcoholy sis,hydrolyzation(including hydrolyzation by enzymatic catalysis)and saponification of lard were stresse d.Lastly,some suggestions and developing trends of the lard were put forwards.
