摘 要: 本文研究了温度、固液比、时间、pH值等因素对近缘新对虾虾头内源蛋白酶酶解反应的影响 ,并用二次旋转正交实验确定了反应的最佳条件。结果表明最佳水解条件为 :固液比 1:2 ,pH值 6 .81,温度 5 3℃ ,时间 5h。 In this paper,the reaction conditions of enzymic hydrolysis by endogenous protease in the prawn head were studied.With quadratic regression of orthogonal and rotational combination, the max percentage of the amino acid was obtained under the enzymic hydrolysis condition: solid-liquor ration:1:2,reaction time:5 hours,reactive temperature:60℃and pH:6.81.
