甲鱼的酶解液化及保健冲剂研究

摘  要: 对甲鱼的酶解液化技术和以甲鱼酶解液化液为主要原料制备甲鱼保健冲剂的生产工艺进行了研究。通过对比试验和正交试验 ,确定了甲鱼的最适水解酶是胰蛋白酶 ,最适酶解条件是甲鱼加 10倍水 ,经高压蒸煮15 m in,在酶浓度 (E/ S)为 6 .4 g/ kg,温度 4 5℃ ,p H7.5条件下水解 6 h,甲鱼水解液化较为彻底。甲鱼保健冲剂的优选配方为 :甲鱼酶解液 6 5份 ,糖 2 8份 ,奶粉 2 0份 ,固形物 12 5 g/ kg的药食同源提取物 2 2份 ,环麦芽糊精 6份 ,柠檬酸 1.5份 ,产品的冲调性、色泽、风味、口感都较好。采用该法生产的酶解甲鱼固体冲剂具有动植物营养成分和保健功能成分互补、利于人体吸收、保健性能优良、风味独特的特点。 This paper studied the technology of fluidization of turtle hydrolyzed by enzyme and the processing technology of health beverage with solution of turtle hydrolyzed by enzyme.By contrast examinations and orthogonal experiments,the optimum hydrolyzing enzyme of turtle was selected as trypsin.The optimum hydrolyzing technology condition of the enzyme was:after boiled for 15 minute under high pressure at adding 10 times water of turtle weight,hydrolyzed for 6 hours at enzyme concentration (E/S) 6.4 g/kg,45 ℃,pH 7.5,turtle was hydrolyzed completely.The optimum formula of health beverage of turtle which was determined was 65 shares of solution of turtle hydrolyzed by enzyme,28 shares of sugar,20 shares of milk powder,22 shares of solid concentration 125 g/kg extracted substance of diets which are served as food and medicine,6 shares of cyclodextrin,1.5 shares of citric acid,the solvency,the colour,the flavor and the taste of the production were good.Health solid beverage of turtle produced by this way was a health beverage with mutual benefit function of animal and vegetable nutrition to be assimilated by people and with specialty flavor.
