摘 要: 本文采用氮气(N_2)、二氧化碳(CO_2)贮藏鸡蛋,主要研究了贮藏蛋中微生物生长情况。结果表明,单独使用这两种气体不能抑制蛋中微生物的繁殖。本试验筛选出了气藏条件下所使用的抑菌剂,即混合杀菌剂(1500 ppm 脱氢乙酸钠和1500 ppm 山梨酸钠混合溶液),并得到气体贮藏蛋的最佳条件:50%CO_2,50%N_2,贮藏温度15℃,相对湿度75%,鸡蛋贮藏前用1500 ppm 混合杀菌剂浸泡杀菌。贮藏6个月可以得到高于81.5%的好蛋率。 The growth of microorganisms in chicken eggs during storage was studied by gas storage. It was found that their growing was not affected by N_2or CO_2.However,when the eggs were treated with 1500 ppm mixed solution of DHA-Na(sodium dehydroacetate)and sodium sorbitate,and then kept in 50% CO_2 and 50% N_2 at 15℃ with relative humidity of 75%,the fresh egg rate was 81.5% after six month storage.
