摘　　要： 探讨了蛋糕生产企业在应用HACCP体系时,描述产品、编写工艺流程、进行危害分析、编制HACCP计划表等具体实施过程。 In this paper we discussed the specific procedures such as describing product, constructing technological process, conducting a hazard analysis and compiling the HACCP program when HACCP system of cake was applied.
