摘　　要： 总结了哺乳动物脂肪酸去饱和酶的结构和种类以及影响其活性的主要因素。脂肪酸去饱和酶系统由ＮＡＤＨ－细胞色素ｂ５还原酶、细胞色素ｂ５和去饱和酶组成，其中去饱和酶的活性受激素和营养以及生理等许多因素的影响。 The fatty acid desaturation,playing an important part in the biosynthesis of polyunsaturated fatty acids in mammals,is catalyzed by an enzymatic system which consists of three proteins cytochrome b 5 reductase,cytochrome b 5 and desaturase A lot of factors are found to be able to affect the activity of the desaturase
