摘 要: 针对豆渣蛋白含量高、产量大而未被充分开发利用的特点,研究采用木瓜蛋白酶酶解豆渣以制备锌螯合盐,从而实现提高大豆加工副产物豆渣资源的附加值。以豆渣为原料,通过单因素试验和正交试验,优化木瓜蛋白酶的酶解工艺条件,并研究豆渣酶解物与锌螯合制备多肽螯合盐的工艺。结果表明,木瓜蛋白酶最佳酶解条件为酶解温度50℃,酶解时间6 h,酶添加量0.04 g,豆渣添加量5 g,并以硫酸锌为锌源,得到的螯合率和螯合物中的锌含量分别为53.78%和40.00%。 Bean dregs protein content is high, large output without being fully exploited the characteristics of study papain bean dregs to prepare a zinc chelate salt, in order to achieve increase the added value of soybean byproducts bean dregs resources. The results show that papain optimum conditions for hydrolysis temperature 50 ~C, time 6 h, enzyme dosage 0.04 g, bean dregs quality 5 g, zinc sulfate and zinc source, chelating rate and chelate zinc content are obtained 53.78% and 40.00%.
