摘 要: 目的测定不同品种的茶叶及茶水中Cu、Mn、Pb、Hg、Cd、As的含量。方法采用原子荧光光谱法和火焰原子吸收光谱法测定茶叶和茶水中重金属的含量。结果六种茶叶中富含Cu、Mn、Pb、Hg、Cd、As等元素,同一种元素在不同茶叶中的含量存在一定差别。各元素浸出率随浸泡次数的增加而降低;Cu和Mn元素浸出率随浸泡时间的延长而增大,Pb、Hg、Cd、As元素则随浸泡时间的延长先升后降;各元素浸出率随浸泡温度的增加而增大。结论茶叶中的Cu、Mn、Pb、Hg、As含量均未超标,绿茶、红茶、青茶和黑茶中的Cd含量超标。浸泡方式对重金属元素含量有影响,可通过弃去第一浸液、提高水温或延长浸泡时间等改善茶水的质量。 Objective To analyze the content of Cu,Mn,Pb,Hg,Cd and As in six kinds of tea. Methods The concentration of Cu,Mn,Pb,Hg,Cd and As were determined by AFS and FAAS in soaking solution. Results The heavy metals were rich in teas,and its extraction rates differed significantly in different teas. The leaching rate of Cu and Mn were increased with the prolongation of soaking time. The leaching rate of Pb,Hg,Cd and As increased first and then decreased with soaking time increase. The leaching rate of all the elements increased with the soaking temperature rise. Conclusion The content of Cu,Mn,Pb,Hg,As do not exceed the standard,however,the contents of Cd is out of limits. Soak method has influence on the heavy metal content,the tea quality could be improved by pouring the first immersion,increasing the water temperature,or prolonging the soaking time.
