摘 要: 干燥是罗非鱼加工的重要方法之一。罗非鱼干制食品在营养、色泽、风味等方面都能够满足消费者的要求,而且容易保存,广受消费者喜爱。罗非鱼干燥加工采用的主要技术有:热风干燥(HAD)、热泵干燥(HPD)、真空冷冻干燥(VFD)、真空微波干燥(VMD)、超临界CO2干燥以及组合干燥(CD)等。本文将论述近年来罗非鱼干燥加工技术的类型及优缺点、研究进展、应用现状和发展趋势。 Drying is one of the important methods of tilapia processing. Dried tilapia is easy to save and meet the requirements of consumers in nutrition, color, flavor, etc. The common technology used in drying tilapia are:hot air drying (HAD), the heat pump drying (HPD), vacuum freeze drying (VFD),vacuum microwave drying (VMD), supercritical CO2 drying and combined drying (CD) and so on. The dry processing technology of the tilapia will be discussed advantages and disadvantages of various types in recent years. And introduced research progress,application status and development trend.
