辐照苹果热风干燥工艺的实验研究
The influence of γ-irradiation and the better technology on the drying for apple slice

摘  要: 以切片苹果为物料进行不同剂量辐照后热风干燥特性和以辐照剂量、风温及切片厚度比等因子对总降水率、维生素 VC、干制品外观质量和复水比等指标进行二次正交旋转回归的优化干燥工艺研究 .结果表明 ,就干制品外观质量而言 ,以辐照剂量取中、热风温度取中和切片厚度取薄为佳 ;对总降水率而言 ,辐照剂量取大、热风温度取高、切片厚度薄时其值取大 ;对干制品 Vc含量 ,辐照剂量取中、热风温度取低、切片厚度以厚时为佳 ;对干制品复水比 ,辐照剂量取高、热风温度取中。 The technology of drying by hot air has some defects such as the low efficiency and the inferior quality of the dried products, which becomes the obstacle for its further application. A new technology is introduced, that is, to dry bio products by hot air after they are pretreated with irradiation. Experiments are made to study the influence of different dosage of irradiation on the rate of dehydration of irradiated apples. A conclusion is reached that the more the dosage is, the greater the rate of dehydration of apple is. On the basis of guadratic orthogonal rotary combination experiments, the regression equations were established in which the influence of dosage of irradiation, temperature of hot air, thickness of the apple slice on the qualities of appearance, rate of dehydration, V C content of dried apple and the ability of absorbing moisture. Optimal combinations of the three factors on the four objects were respectively obtained. By means of multiple objective nonlinear programming method, the better combination of the three factors on the multiple objects were also obtained.
