摘 要: 微生物胞外多糖以其独特的物理学和流变学特性及使用安全性,在食品行业有着广泛的应用,一些胞外多糖还可作为药品或保健品应用于医药领域。但是微生物胞外多糖产量通常较低,使其工业化生产及应用受到限制。综述了提高微生物胞外多糖产量的方法的研究进展。 Exopolysaccharides (EPS) have a wicie range of application in food industry as their unique physical and rheologicalproperties and the use safety. Some EPS also can be used as drugs or health products in medical fields. However, the yield of EPS islow, which limits their industrial production and application. In this paper, the research progress of methods to improve EPS's yieldwere reviewed.
