摘 要: 采用Biaxially oriented polypropylene(BOPP)膜对樱桃填充100%O2进行气调包装,以填充空气并包装的果实作为对照组,在樱桃贮藏运输的温度(4℃)下,研究高氧气调包装对樱桃外观品质及其酚类的变化。研究表明,填充100%O2气调包装下樱桃的硬度值、色度值好于对照组,对酚类(花色苷、总酚、VC)的含量影响不明显。因此,新鲜樱桃高氧气调包装不利于樱桃酚类含量的保留。 In this paper, the effects of high-atmospheric oxygen (100% O2) modified atmosphere combined with biaxially oriented polypropylene film packaging on the phenolic components of cherry fruits are investigated during storage at cold temperature (4 ℃) using the cherry fruits filled with air as control. The results show that appearance quality of cherry fruits packaged by high-atmospheric oxygen (100% O2) is better than the control. But high-atmospheric oxygen modified packaging has no significant influence on phenolic components (anthocyanin, total phenolics, vitamin C) . In general, phenolic components of cherry fruits are not effectively maintained by high-atmospheric oxygen modified atmosphere combined with BOPP film packaging.
