摘 要: 水产品在低温贮藏中,其体内的氧化三甲胺脱甲基酶将催化三甲胺产生内源性甲醛,降低水产品的品质和安全性。通过阐述氧化三甲胺脱甲基酶的性质及催化机理,分析近年来水产品中氧化三甲胺脱甲基酶抑制措施的研究进展,以期为控制水产品中内源性甲醛的产生提供参考。 During the cold storage of aquatic products, trimethylamine may be catalysed by trimethylamine-N-oxide demethylase (TMAOase) and forms endogenous formaldehyde, which leads to the decreasing of quality and safety of aquatic products. In this paper, the properties and catalytic mechanism of TMAOase, especially the advances in the inhibiton of TMAOase are reviewed in the hope of providing some references for the control of endogenous formaldehyde.
