摘　　要： 本文主要概述了紫甘薯花色苷的抗菌、抗氧化及肝损伤保护作用的研究进展，包括紫甘薯花色苷的理化性质、抗菌、抗氧化、肝损伤保护作用机制及研究现状，为紫甘薯的综合开发利用提供参考。 The research progress in antimicrobial, antioxidant and protective effect of injured liver of purple sweet potato anthocyanins were synthetically discussed, including physicochemical properties of purple sweet potato anthocyanins, antimicrobial, antioxidant and protective effect of injured liver mechanism and research status. In order to provide reference of integrated development and use of purple sweet potato.
