摘 要: 硬度是水果质量评价的一个十分重要的指标。与水果硬度有关的机械特性有破坏应力、破坏应变、破坏能和杨氏模量等。以前 ,人们常假设水果内各处机械特性基本一致 ,有关水果的非均质、各向异性机械特性的研究很少。本文研究了梨肉取样部位、方向、深度及朝向对破坏应力、破坏应变、破坏能和杨氏模量等指标的影响。试验表明 :样品的部位、方向、深度等显著影响 4个机械特性指标 ,而朝向对指标的影响呈极不显著。 Firmness is an important index of fruit quality. Mechanical properties of fruit concern with firmness are failure stress, failure strain, failture energy, and apparent modulus of elasticity (Young's modulus). Knowledge of these mechanical properties of pear flesh and intact pears is needed to develop a method to sort intact pears according to their firmness. The objective of this study was to determine the effects of specimens sampled from different orientations and locations of a pear on failure stress, failure strain, failure energy and Young's modulus. All above the four mechanical properties were significantly influenced by specimen oriention, latitude (location from stem to calyx) and depth (from skim to core).
