摘　　要： 以营养期王草为试验材料,采用化学法从王草中制备水溶性膳食纤维(Soluble Dietary Fiber,SDF)。经单因素试验和正交试验,确定王草水溶性膳食纤维最佳制备工艺为:液料比10∶1,pH 4,时间60 min,水浴温度60℃,提取率为2.86%。 King grass （Pennisetum pruprueum） were usedas the raw material to extract the soluble dietary fiber （SDF） by chem-catalyzed hydrolysis method. The results of monofactorial experiments and orthogonal experiments indicated that the optimal conditions for the extraction of SDF were V（water） ： V（materia） = 10 ： 1, pH 4.0, time 60 min, temperature 60℃. The production rate of SDF was 2.86%.
