摘　　要： 以藕带作为试材,对藕带的成分进行测试,测试结果表明藕带的VC含量较高。利用质构仪对藕带进行质地多面分析(TPA),定义藕带的硬度和脆度,TPA分析表明藕带的硬度与脆度存在正相关性,脆度与直径存在正相关性。 Taking lotus root＇s sprout as material, the ingredient of lotus root＇s sprout is studied, the result indicates that VC content of lotus root＇s sprout is high. At the same time, lotus root＇s sprout is analyzed by TPA, definiting the hardness and fracturability, and TPA analysis shows that the hardness and fracturability of lotus root＇s sprout have the relevance, and the fracturability and diameter have the relevance.
