摘 要: 以油莎豆渣为原料,采用高压均质-酶结合法,提高油莎豆膳食纤维中水溶性膳食纤维含量。考察均质压力、纤维素酶添加量、酶解温度对油莎豆膳食纤维中水溶性膳食纤维含量的影响。通过响应面试验设计,得到提高油莎豆膳食纤维中水溶性膳食纤维含量的最佳工艺条件:均质压力37.184MPa、纤维素酶添加量0.88%、酶解温度45.86℃、酶解时间2.5h,油莎豆膳食纤维中水溶性膳食纤维含量为30.19%。所得回归模型拟合情况良好,达到设计要求。 Using Cyperus bean dregs as raw material and high-pressure homogenizer-enzyme binding assay to improve the content of the soluble dietary fiber. The effect of homogenization pressure, the amount of cellulose and hydrolysis temperature on the content of soluble dietary fiber was also investigated. The response surface experimental design showed the optimal condition was: homogenization pressure 37.184 MPa, the amount of cellulose 0.88%, hydrolysis temperature 45.86 ℃, hydrolysis time 2.5h, the optimum water-soluble dietary fiber yield was 30.19%. Derived from regression model fitting in good condition and meet the design requirements.
