摘　　要： 肌肽是存在于动物机体组织中的二肽 ,具有多功能的抗氧化活性。 Carnosine is a naturally occurring skeletal muscle dipeptide, it has a multifunctional effect on food oxidation. In this paper, the exetract method and the antioxidant functions of carnosine are reviewed.
