摘 要: 本试验随机选取了在相同条件下饲养的120日龄贵妃鸡、怀乡鸡和北京油鸡三种优质鸡母鸡各24只,分别取其胸肌和腿肌做成切片,用于对三种优质鸡的母鸡肌纤维密度、肌纤维长度和肉品质进行比较,同时对肌纤维特性与肉品质的相关性进行研究,结果表明:(1)肌纤维特性方面:三种优质鸡腿肌直径大于胸肌直径,相差范围在0.73~2.6μm之间,其中怀乡鸡>北京油鸡>贵妃鸡;三种优质鸡胸肌密度大于腿肌密度,相差范围在43.18~181.56根/mm2之间,其中北京油鸡>怀乡鸡>贵妃鸡.(2)肉品质方面:三种优质鸡腿肌肉色大于胸肌肉色,差异极显著(P<0.01),相差范围在2.62~9.01之间,其中北京油鸡胸肌肉色大于怀乡鸡,而怀乡鸡胸肌肉色大于贵妃鸡,分别大1.33和3.2,腿肌肉色上,北京油鸡大于贵妃鸡,贵妃鸡大于怀乡鸡,分别大3.64和3.19;三种优质鸡胸鸡和腿肌pH值差异不显著(P>0.05),范围在6.1~6.2之间;三种优质鸡胸肌滴水损失大于腿肌,差异极显著(P<0.01),其中胸肌上,贵妃鸡滴水损失大于怀乡鸡,怀乡鸡大于北京油鸡,分别大0.82和3.09,腿肌滴水损失上,怀乡鸡滴水损失大于贵妃鸡,贵妃鸡大于北京油鸡,分别大2.3和3.49.(3)相关性方面:总体上看,肌纤维直径与密度呈负相关关系(r<0),肌纤维特性与肉色呈正相关关系(r>1),肌纤维特性与肌肉pH值和滴水损失呈负相关关系(r<0). Meat quality and muscle fiber were tested among 24 Princess, Huaixiang and Peking chickens in each variety of 120 days raised under the same conditions, and the muscle fiber, meat quality and relationship between fiber and meat quality were analyzed. The results showed that: ( 1 ) as for the muscle fiber, the leg muscle diameter was higher than chest muscle diameter by 0.73 to 2.61~m ,and from big to small was Huaixiang 〉 Peking 〉 Prin- cess ; however, the chest muscle density was higher than the leg muscle density by 43.18 to 181.56 root/ram2 ,and from big to small was Peking 〉 Huaixiang 〉 Princess. (2) as for the meat quality, in all the three different chickens, the leg muscle color was deeper than its chest muscle color by 2.63to 9.01, and it was significant different(P 〈0. 01 ) ;in the chest muscle color, Peking was higher than Huaixiang by 1.33 ,otherwise Huaixiang was higher than Princess by 3.2; but in the leg muscle color, Peking was higher than Princess by 3.64, otherwise Princess was higher than Huaixiang by 3.19 ;there was no significant difference in PH of the three different broilers( P 〉 0.05 ), with range from 6.1 to 6.2 ; in the drop water loss, the chest muscle was higher than leg muscle in all the three dif- ferent broilers,and the difference was significant(P 〈 0.01 ) ; the drop water loss of chest muscle of Princess was higher than the Huaixiang chicken by 0.82, otherwise the Huaixiang was higher than the Peking by 3.09 ; howev- er, the drop water of leg muscle of Huaixiang chicken was higher than Princess by 2.3, neverthe less the Princess was higher than Peking by 3.49. (3) there was negative correlation between fiber diameter and density of Princess, Huaixiang and Peking chicken( r 〈 0) ; there was positive correlation between muscle fiber characteristics and meat color of Prineess,Huaixiang and Peking chicken( r 〉 1 ) ;there was negative correlation between muscle fiber charac- teristics and PH,drop water loss of Princess,Huaixiang and P
