摘 要: 为了比较不同养殖方式鸡蛋的营养成分,分别测定笼养鸡蛋与散养鸡蛋的蛋品质及其营养成分.结果表明:笼养鸡蛋与散养鸡蛋蛋品质中蛋重、蛋黄蛋清比、蛋黄比与蛋清比具有显著性差异(p<0.05).营养成分中全蛋中水分具有显著性差异,此外蛋黄中灰分、粗脂肪与胆固醇具有显著性差异.但蛋白质、糖类与卵磷脂无明显差异. To compare the egg nutrition in different culture models, the egg quality and nutrition of coop - reared and free - reared hen' s were determined. The results showed that egg weight, the ratio of albumen/yolk, albumen or yolk/the whole egg were significant ( p 〈 O. 05 ) between coop - reared and free - reared hens. The content of water in whole fresh eggs, the ashes, fat and cholesterol in yolk were significant in difference. But the protein, car- bohydrate and lecithin were not significant in difference.
