摘 要: 抗酶解溶粉是食品工业中新发现的一种特殊的碳水化合物 . Enzyme resistant starch is a new carbohydrate found recently in food industry. In this paper the connection between RS and traditional dietary fiber,RS formation and determination are reviewed.
