摘 要: 介绍了速冻食品的历史,以及国内外发展现状,概述了速冻食品的冻结原理、特点、种类,并总结了速冻设备现状,提出了我国速冻食品及速冻设备研究发展的方向。 The paper reviews the history of quick-frozen food and its development both in our country and broad. Freezing principle, characteristics, varieties of quick-frozen food and quick-freezing equipment are introduced. The development orient of quick-frozen food and equipment is also discussed in the future.
