摘 要: 通过富集培养,从酱香型白酒高温堆积发酵酒糟中筛选出1株能在46℃下发酵的耐温酵母菌株A10,其最适生长温度36℃、pH值为4.0。通过考察温度对A10发酵的影响,确定A10的最适发酵温度为38℃,发酵72 h后,发酵液中酒精浓度达到5.1%vol。 A high temperature resistant yeast strain A10(grow well at 46 ℃) was screened out from high temperature stacking fermented Maotai-flavor grains through enrichment culture.Its best growth temperature and growth pH value were at 36 ℃ and 4.0 respectively.Through the study of the effects of temperature on strain A10 fermentation,the optimum fermenting temperature was at 38 ℃,after 72 h fermentation,alcohol content in the fermenting liquid could reach up to 5.1 %vol.
