摘 要: 从渗透脱水的影响因素、渗透脱水对热带亚热带果蔬的影响以及渗透脱水传质动力学三个方面综述了果蔬渗透脱水的研究进展,其中重点介绍了渗透脱水的影响因素,同时对果蔬渗透脱水技术的局限性及其应用前景进行了探讨。 The advances in research on the osmotic dehydration of fruits and vegetables were reviewed in the influencing factors of osmotic dehydration, the effects of osmotic dehydration on tropical and subtropical fruits and vegetables, and the mass transfer kinetics of osmotic dehydration, with the influencing factors of osmotic dehydration focused on. Meanwhile, the limitations and application prospects of the osmotic dehydration of fruits and vegetables were discussed.
