摘 要: 右旋糖酐是一种应用于食品和医药行业的微生物多糖。文中从机理研究、生产菌株和酶的筛选及优化、生产条件控制等方面综述了酶法合成右旋糖酐的最新研究进展,指出酶法合成右旋糖酐仍存在机理不明和产物品质有待提高的问题,而优化固定化技术和开发新菌种以利用葡萄糖代替蔗糖为底物合成右旋糖酐将是右旋糖酐研究的一个新方向。 Dextran is a microbial polysaccharidet that is widely applied in pharmaceuticals and food industry.This paper reviews recent progress on enzymatic synthesis of dextran involving mechanism,optimization of dextransucrase,production control and modulation.Difficulties in elucidating the mechanism as well as enhancing the quality of dextran were also discussed.The paper also points out the orientation of future research and development of dextran enzymatic synthesis,which might lie in the immobilization technology optimization and a new technology to develop new strain that uses glucose as a substrate for dextran enzymatic synthesis.
