摘 要: 豆渣是多种膳食纤维原料中质高价廉的一种。新鲜豆渣的缺点是水分含量高,难以贮藏,豆腥味重且口感粗糙。本研究针对豆渣的缺点,采用化学法、酶法及酶与化学结合法提取膳食纤维。 Okra is a cheap and high - quality material for the production of dietary fiber. Fresh okra has high moisture content, bad taste and mouth feel, and is difficult to store. Several methods (chemical, enzyamtic and combination of chemical, enzymatic methods)for producing dietary fiber are studied in the paper.
