摘　　要： 本文在摇瓶发酵的基础上,利用5 L发酵罐进行重组毕赤酵母甲醇诱导产α-葡聚糖酶发酵条件的优化。结果表明,菌体湿重250 g/L时开始诱导,诱导表达阶段溶氧控制在10%～20%,甲醇诱导90 h时α-葡聚糖酶酶活达330 U/mL。 Cultivations of Recombinant Pichia Pastoris expressing dextranase in 5L fermentor were studied. The method of methanol induction plays important role in enzyme production. The result showed： the best condition to express dextranase is that the methanol induction starts when the cell wet weight is 250 g/L and synchronously keep the dissolved oxygen （DO） between 10%-20%, the end dextranase activity reached 330 U/mL after 90 h methanol induction.
