罗非鱼片热泵干燥及干冷互换工艺的实验研究

摘  要: 为了获得罗非鱼干燥过程的基本特性,利用热泵干燥装置进行了罗非鱼片的干燥实验,得出了在不同干燥条件下的干燥曲线,较全面地反应了罗非鱼片在干燥过程中,干燥风速和鱼片厚度对干燥时间的关系。结合冷冻过程的特点,将冻结工序渗透到干燥环节,采用干冷互换的干燥工艺以改善罗非鱼的干燥性能,以剩余含水率和复水率为指标进行了相应的实验。实验结果表明:在相同的干燥时间内,加入冷冻环节能相应降低鱼片的剩余含水率,且产品的复水品质较好。冷冻时间间隔和冷冻的温度均会对剩余含水率和复水率产生影响,在本实验的范围内,当冷冻时间间隔为4h,冷冻温度为-35℃时,样品的剩余含水率较低,复水率较高。 In order to obtain the basic characteristics of the tilapia drying process,the drying experiment of tilapia fillets was made by using heat pump drying equipment.This paper found out the drying curve of tilapia fillets under various drying condition,the drying curve overall reflected the relationship of drying time with drying temperature,velocity and fillet thickness.Combined with the characteristics of freezing process,the frozen procedure was applied into dry process,dry and cold alternate operation process was used to improve the drying performance of tilapia.Moisture content and rehydration rate were the index of the corresponding experimental,the results showed that in the same drying time,appended the cold process could reduced the moisture content and increased the rehydration rate of the fish.The freezing time and temperature were both in fluencing moisture content and rehydration rate.in the context of this experiment,when the frozen time was 4h,freezing temperature was-35℃,the moisture content of the samples are high and the rehydration rate is lower.
