紫外线系统净化近江牡蛎(Crassostrea rivularis)中细菌的研究

摘  要: 为保证食品安全,研究采用紫外线系统杀菌海水,以近江牡蛎为试验材料,经人工接菌、清洗、粗选等流程后,进行各净化处理条件试验及正交试验筛选,以大肠菌群和菌落总数为指标,探讨净化的最佳环境条件。结果表明,利用紫外线系统能达到海水杀菌的效果,可用于贝类净化。正交试验最优组合为第6组A2B3C1D2(温度25℃、盐度25‰、换水率1次/4 h、贝水比1∶6)和第7组A3B1C3D2(温度30℃、盐度15‰、换水率1次/8 h、贝水比1∶4)。但综合考虑净化效果及经济效益,可选取温度30℃、盐度25‰、换水率1次/4 h、贝水比1∶4,净化时间36 h作为近江牡蛎细菌净化的优化条件。 In order to ensure food safety,ultraviolet system was used to disinfect sea water,Crassostrea rivularis was taken as materials and purified in the purification tank by artificial inoculation,cleaning,and roughly election processes.The best environmental condition of purification on Crassostrea rivularis was researched by experiment of each purification conditions and orthogonal experiment,with coliform group and total bacteria taken as index.The result showed that ultraviolet system could be used to disinfect sea water and purify Crassostrea rivularis.Optimal combination of orthogonal experiment were group 6 A2B3C1D2 (temperature 25 ℃,salinity 25 ‰,water exchange rate 1 time/4 h,shellfish to water ratio 1∶6) and group 7 A3B1C3D2(temperature 30 ℃,salinity 15 ‰,water exchange rate 1 time/8 h,shellfish to water ratio 1∶4).But considered purification effect and economic benefit comprehensively,temperature 30 ℃,salinity 25 ‰,water exchange rate 1 time/4 h,shellfish to water ratio 1∶4,purification time 36 h could be selected as optimization condition to purify bacterias in Crassostrea rivularis.
