摘 要: 建立了气相色谱-串联质谱法(GC-MS/MS)测定焦糖色素中2-甲基咪唑和4-甲基咪唑。样品碱化后,用硅藻土净化,二氯甲烷洗脱,气相色谱-串联质谱法多反应监测模式(MRM)测定。2-甲基咪唑和4-甲基咪唑在0.01~10 mg/L范围内均呈现良好的线性关系,线性相关系数分别为0.9999和0.9997;检出限均为0.005 mg/kg(S/N=3),加标回收率为86%~104%。本法适用于焦糖色素中2-甲基咪唑和4-甲基咪唑的测定。 A method for the determination of 2-methylimidazole and 4-methylimidazole in caramel pigment by gas chromatography-tandem mass spectrometry (GC-IVIS/IVIS) was developed. In this method, the conditions for sample pretreatment and GC-MS/MS were investigated and optimized. The samples were first alkalized, purified by kieselguhr, then eluted with dichloromethane. The detection was carried out by GC-MS/MS in the multiplereaction monitoring(MRM) mode. Good linear relationships were obtained in the concentrations of 0.01 - 10 mg/L for the analyte, while the correlation coefficients were 0. 9999 and 0. 9997, respectively. The limits of detection were 0. 005 mg/kg ( S/N = 3 ), and the recoveries ranged from 86% to 104%. This method is simple, rapid, low solvent consumption, and the complex matrix disturbance in caramel pigment samples can be avoided when multiple-reaction monitoring(MRM) mode was adopted. The method is proved to be accurate, reliable, sensitive and suitable for the determination of 2-methylimidazole and 4-methylimidazole in caramel pigment samples.
