摘 要: 探讨山地鸡规模化养殖循环利用生态模式,建立了两种典型循环种养生态模式。对这两种不同模式养殖的山地鸡鸡肉进行风味指标测定和品尝试验发现,两种山地鸡的肌苷酸、氨基酸、不饱和脂肪酸含量以及口感风味品尝得分均高于对照的普通山地鸡,其中粤凰山地鸡的各项指标最高。 The paper described circulation utilization ecological patterns in mountain chicken large-scaled culture, and also discussed two typical ecological patterns of planting and breeding. Flavor level detection and taste tests of two different mountain chickens were practiced. The contents of inosinic acid, amino acid, unsaturated fatty acid and the taste test scores of two mountain chicken were higher than that of the control mountain chicken, in which the Yuehuang mountain chicken was the best.
