摘 要: 目的:优化猪血中水解蛋白提取工艺,同时辅助提取血红素;方法:以水解度作为主考察指标,以血红素得率为辅助指标,在单因素实验基础上,通过L9(3)4正交实验研究了胰蛋白酶酶解猪血提取水解蛋白和血红素的工艺条件。结果:最佳工艺参数为温度50℃,pH7.5,料液比1:55,胰蛋白酶用量11173U/g,酶解时间4h,在此工艺条件下,水解蛋白得率为40.1%,血红素粗品得率为16.2%。结论:研究结果对猪血资源的综合开发利用具有一定的指导意义。 Objective:To study the extraction process of enzumatic hydrolysis and heme from porcine hemoglobin.Methods:With the degree of hydrolysis(DH) and the yield of heme as the main indicators and Auxiliary indicators respectively,the technology of extracting protein hydrolysate and heme form porcine hemoglobin was optimized by L9(34) orthogonal experiment based on the single factor experiment results.Results:The optimum extraction parameters were:temperature 50 ℃,pH 7.5,solid-solvent ratio 1:55,enzyme added 11173 U/g.According to this,the yield of protein hydrolysate was 40.1% and the yield of heme was 16.2%.Conclusion:The results may have a certain significance for comprehensive utilization to porcine hemoglobin.
