摘 要: 对新疆12个杏品种的品质进行调查,通过可溶性固形物含量的比较,筛选出含量较高的7个品种测定其维生素C、总酸、固酸比、果胶、还原糖含量。研究结果表明,轮台小白杏固酸比、果胶含量较高。赛买提杏的可食率较大,为89.60%,贮藏期长,还原糖含量较低。巴仁杏的单果和杏仁重量也较大,分别为34.60 g和1.04 g。 The quality of 12 apricot cultivars were investigated in Xinjiang,7 varieties were well selected by comparative experiment of the content of soluble solid,vitamin C,total acid,TSS/acid rate,pectin,deoxidized sugar of them were determined.The results showed that TSS/acid rate and pectin content of Luntaixiaobai apricot were relatively high;The edibility of Saimaiti apricot was higher,it was 89.60% and it could be stored for a long period,the deoxidized sugar content was lower;Baren apricot fruit weight and almond weight were greater,they were 34.60 g and 1.04 g respectively.
